Okinawan cuisine and culture

There are differences between the cultures and food eaten around different parts of Japan. Okinawa, the southernmost island chain of Japan, has a distinct tropical climate and as result different cuisine.

One of these is the Hechima sponge cucumber, and Inamoto sensei, who has experience in traveling to various countries, and a lot of experience in teaching Japanese online, introduces this rather bizarre gourdlike vegetable.

Hechima sponge cucumbers

Hechima sponge cucumbers

In Japan, when speaking of Hechima sponge cucumbers, one often talks about making loofah sponges with them, or getting Hechima juice from them. But we don't really eat Hechima sponge cucumbers.

But this year, we planted some Hechima sponge cucumber in our garden. Some foreign friends of ours said that they wanted to try eating it, and we heard that Okinawan people eat it, so we tried to plant it ourselves.

A lot of fruit grew. Hechima is pulpy and whether you put it into soup or stirfry it, it is really delicious. It is perfect as a side dish in a lunch box too.

Hechima sponge cucumber is a summer vegetable, but we are still picking the fruits off ours even now. Even though its is getting cold... It is a mystery, but I'm glad we can eat so many of them.

Do you have Hechima sponge cucumbers in your country ? How do you make use of them ?
