sake

Japanese Sake

Just as there are many types of wine, there are many kinds of Japanese sake (or Nihon Shu) and depending on the sake there are recommended ways of drinking it. Heating up the sake and drinking it is known as "Atsu Kan", drinking sake at room temperature is known "Hiya" and chilling it down is known as "Rei Shu". For people who are not used to drinking Nihon Shu, the easiest way to drink it is "Rei Shu".

Nihon Shu is generally divided into 3 types. "Gin Jou Shu", "Jun Mai Shu"and "Hon Jou Zou Shu". The "Gin Jou Shu" type among these is often drunk as "Rei Shu". "Gin Jou Shu"is a sake that is brewed slowly at a low temperature after polishing the rice ingredients down to less than 60% . Although the ingredients are just rice, the faint flower-like and fruity scents are a mystery and are one of the pleasures one finds in drinking Nihon Shu.

When drinking Nihon Shu for the first time, I recommend that you chill down a fruity "Gin Jou Shu" and treat yourself, however selecting Nihon Shu from just looking at the label is quite difficult, isn't it. If you get a chance to drink some, it might be better to ask the shop staff, 'Which one is easy to drink and has a nice aroma ?' Recently, sparkling Nihon Shu in beautiful bottles is also on sale, I also recommend this type.

As you get used to drinking it, your tastes will come to change. For example, when I was young I couldn't drink "Atsu Kan" but it has become my standard drink during winters. "Atsu Kan" with grilled fish is splendid !
