Japanese summer food

Japanese cuisine or washoku is very changeable according to seasons. But what do you eat when the temperatures soar above 30 degrees Celsius and the humidity rises above 70% ? During days like this, many people lose their appetites and don't feel like eating warm, heavy food – yet we all need to get our nutrition !

Well, as you would guess, there is a washoku solution to this season's downside. Read the blog below by Shiomi sensei, a Japanese language teacher at JOI to find out some of the food you can enjoy during sweltering heat.

暑い夏には、冷やし中華が 食べたくなります。冷やし中華とは、冷やした中華麺に 野菜、ハム、卵などの具材のせて、冷たいたれかけて食べる、日本の麺料理です。

作り方は 簡単で、中華麺を ゆでてから 冷水冷やして、その上に 細切りのハム、卵、キュウリやトマトなどのを きれいに盛り付け醤油 あるいは ゴマをベースにした たれかけたら 出来上がりです。具材様々で、細く裂いた蒸し鶏を 使用したり、地域によって、また家庭によって 違います。多くの中華料理店では、夏がくると メニューに 冷やし中華を 追加して「冷し中華はじめました」という貼紙を 店に貼ります。コンビニやスーパーでも 手軽に 買うことができます。わたしは、アボカドやゆで卵を のせて 食べるのが 好きです。

他にも、冷やしうどん、ざるそば、そうめん等、夏になると 冷たい麺料理を 食べる機会が 多くなります。日本の蒸し暑い夏には 冷たい麺料理がぴったりなのです。みなさんの国では、夏に何を食べますか?

Chilled Chinese noodles

During hot summers, I feel like eating chilled Chinese noodles (known as Hiyashi Chuuka in Japanese). Hiyashi Chuuka is a Japanese dish that is made with chilled Chinese noodles on top of which you put ingredients such as vegetables, ham and eggs and eat after pouring a cold sauce over it.

It is easy to make; you boil some Chinese noodles and then chill them with cold water and on top of these you beautifully place thinly sliced ham, eggs, cucumber and tomatoes then you pour a sauce made from a soy sauce and vinegar base or alternatively a sesame base on top and it is done. The ingredients can vary, for example you can also use thin slivers of steamed chicken, and it can differ depending on the area and family. At many Chinese restaurants, when summer comes along they add chilled noodles to their menus and stick up posters that state that “We've started serving Hiyashi Chuuka”. You can also buy it cheaply at supermarkets and convenience stores. Personally I like to place avocado and boiled eggs on top and eat it.

When summer comes along in Japan, there are many chances to eat other cold noodle dishes too for example chilled udon noodles, Zaru soba noodles, fine white Soumen noodles, etcetera. Cold noodle dishes are a perfect fit for the humid Japanese summer. What do you eat in summer in your country ?

I’m originally from Kobe, Hyogo prefecture. Kobe is a beautiful city that is surrounded by the sea and mountains. Himeji castle is located in Hyogo prefecture and it is the largest and the most beautiful castle in Japan. It has also been registered as a World Heritage Site.
